Savoring traditional dishes from the African, Spanish, French, Chinese, Indian, British, Dutch and Native American populations of the region are commonly served. Among the first inhabitants of the islands were the Arawak Indians, who had a custom of cooking meat over a grate of thin wood strips. This grate was called a barbacoa, which made its way into the English language as “barbecue.” African influences can be seen in the technique now known as “jerk” cooking — which involves slow-cooking spicy meats, such as pork or chicken. Spanish-speaking islands have an affinity for the flavors of lime and garlic. Chinese settlers introduced rice to the Caribbean where it is still a staple. And seafood, in a variety of preparations, is always served fresh from the clear blue ocean. The Spice Isle Known as “The Spice Isle,” Grenada is a leading producer of such exotic favorites as cinnamon, cloves, nutmeg and ginger. A trip to Laura’s Herb and Spice Garden to view nutmeg and cinnamon trees is a unique opportunity to learn how these spices have been used over the centuries for both curative and delicious purposes. Organic cocoa cultivation is another island specialty and you’ll taste the sweet results when you sample a decadent, locally made chocolate bar. And for the ultimate indulgence, give your visit to Grenada some kick with a visit to a private rum distillery, located in an historic fort overlooking St. George’s harbor. Princess Cruises Debuts 2012-13 Americas Program
Season Features Favorite Sun-Drenched Ports in the Caribbean

SANTA CLARITA, Calif.  -- Sun-swept destinations, and a variety cruise options mark Princess Cruises' just-announced "Americas" program to the Caribbean for the 2012-13 season.

Season highlights include two new week-long itineraries in the Caribbean, two new 14-day day itineraries through the Panama Canal.

The line's Americas season runs from September 2012 through May 2013 and includes:

Caribbean -- Five ships sail the sparkling waters of the Caribbean, offering 14 itineraries to more than 20 sun-kissed ports. Passengers can choose from sailings of seven to 14 days, including two new itineraries -- seven-day Southern Caribbean (with Aruba, Curacao and Princess Cays) and Western Caribbean (featuring Belize, Roatan, Grand Cayman and Cozumel) routes on Crown Princess, both roundtrip from Ft. Lauderdale.

Panama Canal -- Princess continues to lead the way in Panama Canal cruising with five itinerary options including 10-day partial transits and 14-day itineraries between Ft. Lauderdale and Los Angeles, featuring Coral Princess and Island Princess, ships specifically designed for Canal cruising. On select 14-day departures, Princess offers the Two-Day Experience with a full transit of the Panama Canal and a full-day in Fuerte Amador. In total, passengers can choose from 38 departures, sailing roundtrip from Ft. Lauderdale, or between Ft. Lauderdale and Los Angeles, San Francisco or Vancouver.
